Delicious Ramen
Healthy, fancy and WAY easier than you'd think. You can make this with any protein you like, I like to do a mix of chicken and prawn or tofu.
Ingredients:
Protein of choice
Dried rice noodles
1 Vegetable stock cube
1 tablespoon tomato puree
1 tablespoon brown sugar
rice wine vinegar
sesame oil
soy sauce
chilli flakes
onion granules
black pepper
lemon juice
1 plum or 2 small oranges
a handful of frozen peas
1 carrot
1 finger chilli
2 spring onions or half a leek
a handful of mushrooms
a handful of cashews
Method:
Peel and chop all your fresh veg and heat a little oil in your wok.
If your using meat, fry the meat until its halfway cooked in a little soy sauce, onion powder and black pepper. Then add the fresh veg to the wok.
Melt the stock cube in a jug of boiling water and add in the tomato puree and the plum or oranges.
Place the noodles in the stock to soften.
Add the cashews to the wok along with a tbsp of lemon, 1 tbsp brown sugar , 2 tbsp of vinegar and 2 tbsp of sesame oil.
By now the noodles should be soft enough to add to the wok. Bring to the boil and let it simmer.
Now you can add in the frozen peas and prawns or this is where you will add tofu if that is your protein of choice.
You can add more water in now to make more of a soup, then simmer for 15 mins or so and serve!
