Mac'n'Cheese

Comfort Food For Cold Winter Nights

This comforting creamy dish can be made with or without dairy, if you like dairy, just subsitute the dairy free items I use :

  1. Boil the gluten free macaroni with a little olive oil and preheat your oven to 180.

  2. While the pasta is cooking, make your sauce. Add a little dairy free butter to a saucepan and let it melt over medium heat. sprinkle in a little flour to form a paste - this is called a rue. Gradually add a tin of coconut milk to the saucepan and heat until it begins to simmer. Now you must begin adding in your cheese, I like Tesco Free From grated vegan cheese. continue until you reach a smooth silky consistency.

  3. By now you pasta should be nice and soft so drain it and add it to an oven proof dish.

  4. Pour your cheese sauce in to the dish on top of the pasta and season with salt, pepper and paprika.

  5. Top off your mac' with some gluten free breadcrumbs and sprinkle some extra vegan cheese on top.

  6. Bake in the oven for 15-20 mins and enjoy!
