Chewy chocolate chunk cookies
Inspired by Antoni Porowski and adapted to make them dairy-free
250g Self-raising flour
1 tsp salt
180g dairy-free butter
140g dark brown sugar
1 egg yolk
2 tsp vanilla extract
300g dairy free chocolate
Heat the oven to 170 C
Melt the butter in the microwave and set aside to cool.
In a large bowl mix all the dry ingredients.
In a smaller bowl mix the cooled butter with the egg and egg yolk and vanilla and then add to the large bowl.
Combine all the ingredients to create a dough then gently fold in the chocolate chunks.
Refrigerate the dough for at least 30 minutes before rolling the cookies into rounds and baking for 15 mins.
Allow to cool for maximum flavour.
